Jolly Jellyfish Lunch

Here’s what you’ll need to make this lunch for one child:

  • ½ sandwich round or pita pocket
  • Your favorite sandwich filling
  • 10-12 long slivers of multicolored heirloom carrots
  • 5 sections of an orange
  • 1-2 tablespoons of hummus

Directions:

  1. Fill ½ of a sandwich round or pita pocket with your favorite sandwich filling.
  2. Position sandwich flat side down at the upper edge of your plate.
  3. Create jellyfish tentacles with slivered carrots.
  4. Make a starfish by positioning five orange sections in the shape of a star.
  5. Spread a dollop of hummus on the bottom of your plate to make a sandy ocean floor.

Variations:

  • Instead of making a sandwich, cut a tortilla in half and make a quesadilla to form the jellyfish.
  • Use multicolored sweet pepper slices or narrow slices of lunch meat and cheese instead of heirloom carrots to form the tentacles.
