U Is for Uppity Umbrella

This fruity ABC Snacks recipe is the perfect lunch to brighten up a rainy day.

U Is for Uppity Umbrella - An ABC Snack from All About Reading

It’s that wonderful time of year when April showers bring beautiful May flowers.

Of course, if you live in the Northwoods like we do, April can bring more snow than rain…but we’ll keep our umbrellas handy just in case.

This fruity ABC Snacks recipe is the perfect lunch to brighten up a rainy day.

Yummy fruit and a cloud-shaped sandwich promise to make this a favorite with even the most persnickety preschoolers. And rain or shine, this creative snack is healthy enough to keep moms happy, too.

My helper had a great time helping with this easy-to-assemble snack. The hard part was keeping her from eating all the raindrops before we got our snack put together and all our pictures taken. Riley really likes blackberries.

Uppity Umbrella Snack

Here’s what you’ll need to make this snack for one child:

  • 1 red apple
  • 12 blackberries
  • 1 slice of green bell pepper
  • 2 slices of bread
  • Your favorite sandwich ingredients

Directions:

  1. Cut an apple in half lengthwise.
  2. Remove the core and seeds from one half of the apple.
  3. Cut a slice off the bottom of the apple to create an umbrella shape.
  4. Peel the apple in vertical stripes.
  5. Place the apple on a plate with the flat side down.
  6. Place a slice of green bell pepper under the apple to create the umbrella handle.
  7. Make a sandwich from your favorite sandwich fixings.
  8. Cut the crust off your sandwich to create a cloud shape.
  9. Place the cloud on the plate above the umbrella.
  10. Sprinkle blackberry raindrops around the plate.
